Jamie's Fermented Pickle Relish

After seeing the Big Mac taco go viral I had to jump on the band wagon. Except I come with a brand new twist making a relish that contains probiotics! Probiotics help us digest our food a lot faster therefore reducing heartburn and giving your gut the good bacteria it needs to properly function. Over the past ten years I have helped many people with digestive issues. I have cured my own IBS and got off my digestive pills by adding simple ferments into my diet. It is now my passion to spread the awareness and show you how I did it. If you would like to learn more about wild fermentation check out my book below. In this book I teach the novice how to make their very own probiotics at home using just food.

Ingredients:

  • 1 large cucumber
  • pint jar
  • ½ an onion
  • 3 cloves of garlic
  • 1 TBSP of sea salt
  • 1 tsp of mustard seed
  • ½ tsp of cane sugar
  • spring water

Chop up the cucumbers, garlic and onion. Place in bowl then add in the rest of the ingredients. Give it a good mix. Then add to pint jar. With a spoon press down the veg, packing it down off the ring of the jar. Then fill jar with spring water to ring, covering the veg. Screw on mason jar lid tight and ferment for 3 to 5 days. If you’re in a hot climate then ferment for 3 days and if you’re in a cold climate ferment for 5 days. This is a wild fermentation recipe therefore you will not need a starter culture.
