Tzatziki sauce is a staple in the Mediterranean diet and I can see why. The sauce goes great with practically anything. Even using it as a side or a dip for your flatbread. This cucumber infused sauce will have you coming back for more. This sauce makes for a great dip for herbed chicken or more commonly known as souvlaki chicken. I take it a step further and enjoy a dollop of Tzatziki on my bowl of lentils! The options are truly endless here. Instead of buying it already made at the market you can truly make it at home much cheaper. Just pennies on the dollar and you got 32 oz that will last you well into the week or more. The recipes are all pretty much the same, so let's make it!
You will need:
32oz of plain greek yogurt
1 long seedless English cucumber
Dill ( fresh or dried) 2 sprigs or 2 tbsp of freeze dried
Salt to taste
1 Lemon
1 tsp of EVOO
Pour all the yogurt into a large bowl. Add in the EVOO, Dill and then squeeze one fresh lemon, discarding the seeds. Go ahead and shred your cucumber onto a plate. Then with a cheesecloth squeeze out all the water from the cucumber until no more water comes out. Then add the strained and shredded cucumber to the bowl. Give it a good mix. This is were I begin to salt mine to taste. Once I have the desired level of salt I usually put the sauce back into the yogurt container and refrigerate for at least a good 8 to 10 hours before using it. This gives the Tzatziki sauce time to marinate and have all the flavors come out. This usually lasts me about a week or two. Varying on the dishes I make of course. Below is a quick video version...
Making a sauce like this is a great way to replace the other sauces that are not so good for you like mayo or ranch dressing. Change up your meals and make them greek. Add tzatziki to your burgers and wraps. Get creative! We must remember that Whole Foods with no chemicals is what our bodies crave for! Giving up processed foods and making things from scratch is the way to go! Thats why meal prepping this protein packed sauce and having it ready is a must for me in our busy schedules.
