I created this meal prep plan because I know how overwhelming dinnertime can feel when you’re juggling everything — work, school runs, picky eaters, and trying to get something vaguely nutritious on the table (ideally without a load of washing up!).
I’m a mum of two, and over the years I’ve had to get smart with how I plan and prep meals — especially during those full-on weeks when time is tight and energy is even tighter. My eldest had multiple food allergies when she was little, which made dinnertime even more of a challenge. It meant I had to cook from scratch, be super organised, and find ways to make dinner less of a daily stress.
This plan is exactly how I keep things ticking along during the week — quick, simple meals that the whole family will actually eat, all prepped in about an hour using the air fryer. No over-the-top prep, no endless ingredients, just real food made easier.
