About needle choice: Your circular needle length depends on your preferred knitting style. A 16 in (40 cm) circular works for most adult hats. If you prefer magic loop, use 32" (80 cm) or longer. You can also work with two circulars. When you have fewer stitches during crown decreases, you might find DPNs easier to handle, but stick with your circular method if you prefer. I won't indicate when to switch; you'll know what feels right.
