This is our Number One Question. The answer?

All our herbs are handpicked. They are grown on our property; five acres along the banks of the Skykomish River, at the base of the Cascade Foothills. They are grown organically without herbicides or pesticides.

As soon as they are picked, they are dried in a dehydrator, and very gently crushed. Why so gentle, and why do my herbs arrive in really large, whole pieces sometimes?

The less they are handled, the more flavor they have when you get them. I don't cut and sift my herbs. They are going to look different, more whole, when they arrive in your hands.
