Apple Breakfast Crumble

Crumbles! We love to love em, but hate to experience the result of sugar and butter sitting in our stomachs. Well maybe. Sometimes it's absolutely worth it. Regardless, let me let you in on a little secret of something I like to call the best of both worlds. ;) This recipe achieves a nourishing breakfast and your fill of warmth and comfort in a bowl! 30 minutes after your meal, you'll feel digested and blessed to get on with your day! So follow me into the world of healthy, but yummy breakfasts.


If you're cycle syncing, this is a great option for the luteal phase!

Tools:

Cast iron pan - if you do not own one, your regular pan is fine, you will need to transfer into a baking dish

Cutting board & knife

Blender or food processor

Measuring spoons/cups (unless you can eye things well)


Ingredients: (for a single serving)

BASE-

1 apple

1 tsp cinnamon (or as I do, 3-4 shakes)

1/2 tsp nutmeg (fresh is King)

~1tbsp of ghee, butter, or coconut oil

pinch of salt


CRUMBLE-

1/4 cup oats

small handful of nuts (walnuts & pecans seem most fitting)

1-2 dates (depending on how sweet you're going for)

1 teensy splash of water


OPTIONAL-

Flax seeds or meal (this would go in the crumble for extra fiber)

Maldon, finishing salt

Honey, maple, or agave

Jam


Instructions:

Set your oven to 350 F

  1. Heat your pan on medium to high heat and add "fat"/oil. While your pan is heating, chop apples into ~inch sized pieces, add them to the pan along with the spices. Keep the temp around medium heat
  2. While the apples are cooking, combine "crumble" ingredients in your food processor or blender until it appears to be crumbly.
  3. Once apples are warmed and beginning to soften and crisp, kill the heat and add the crumble on top. (This is where you would transfer to a baking dish, if your pan can't go in the oven, but I suggest moving the apples over before the crumble to avoid an extra mess).
  4. Cook for 15-20 minutes and serve on its own or on top of yogurt! You can also put it on top of pancakes or waffles if you want to get extravagant with it!
