Banoffee Pie

I discovered Banoffee Pie while listening to an episode of Rachel Belle's podcast "Your Last Meal" in 2017. On it, a Top Chef judge, discussed the origins of this beloved English Dessert, why she chose it to be her last meal, and who she would make it for (her family!). Feeling inspired, I created an ice cream flavor with similar components and it became an instant hit among my ice cream club members.

Banoffee Pie is a delicious English treat made from bananas, toffee or dulce de leche, whipped cream, with a crunchy biscuit crust and topped with chocolate flakes. My homemade ice cream version consists of Roasted Banana ice cream, candied Digestive Biscuit pieces, swirls of my delicious Salted Caramel, and homemade Milk Chocolate flakes. I tried a batch with dulce de leche, but sadly, the consistency was unpleasant when frozen so I opted to use my tried-and-true caramel. The components in this flavor work in harmony with one another. It is sweet, salty, bursting with roasted banana flavor and chock full of lovely textures. I hope I did this treasured dessert justice, and if you make it, I hope you love it just as much as I do!
