Ecuador's Table is also a podcast — where chef Alejandra Espinoza sits down with leaders in gastronomy, tourism, marketing and culture to ask the question nobody else is asking: why Ecuador, and why now?
Each episode is a conversation without diplomacy — about the potential of Ecuadorian cuisine, the future of its tourism, and the identity of a country the world is only beginning to discover.
The same mission behind this book. Now in your ears.
About Alejandra Espinoza
Alejandra Espinoza was born in Quito, trained at the Institut Paul Bocuse in Lyon, and spent over a decade cooking across Europe and the United States before returning to Ecuador with one conviction: Ecuadorian cuisine deserves a place among the world's great food cultures.
She hasn't stopped since. She founded SOMOS in Quito, now recognized among the 100 best restaurants in Latin America. She opened COTOA in Miami, the first Ecuadorian restaurant to enter the Michelin Guide in the United States. She created COTOITA to bring Ecuador's flavors into everyday life. She wrote the book only she could write about her country's gastronomy. And in 2024, the United Nations named her Special Ambassador for Gastronomic Tourism.
Everything you'll find here — books, products and experiences — comes from the same place: the pride of a country with four worlds in a single territory and a cuisine the world is only beginning to discover.
