A tarboosh is a traditional hat worn throughout the Middle East, especially in the Eastern Mediterranean. It is a close fitting, flat topped, brimless hat. For this knit version, I used the texture found in my Kabsa mitts for the body of the hat and used stockinette stitch and decreases to create a flat, circular top.
