Toasted Coconut with Valencia Orange Curd & Dark Chocolate Flakes

My Ode to Puerto Rico. I created this flavor in 2017 after Category 4 Hurricane Maria hit Puerto Rico, causing mass destruction and devastation. I donated all the proceeds I received from every pint I sold to help with immediate relief and aid. (Almost) Nine years later, I'd like to do it again. Every dollar from every recipe I sell, plus an additional $100, will go to PRxPR Relief and Rebuild Fund. This nonprofit was founded by local business owners to provide immediate disaster relief and long-term rebuilding assistance to Puerto Ricans after hurricanes Irma, Maria, and Fiona. 100% of donations are sent to local organizations for food, clean water, and solar projects.

This flavor highlights many ingredients prevalent and popular in Puerto Rico including coconut, oranges and chocolate. The sweet coconut pairs beautifully with the tangy orange curd and earthy, almost bitter, dark chocolate rounds out the flavor perfectly. I hope you love it and thank you in advance!
