Matcha
Before embarking on my homemade ice cream journey, I had worked in several restaurants and coffee houses. Over time, I noticed a growing demand for drinks made with matcha, a type of green tea. Intrigued by its popularity, I decided to create an ice cream flavor inspired by a matcha latte. In this recipe, the bitterness of the matcha is harmoniously balanced with the sweetness of the sugar and cream, enhanced with a hint of vanilla extract and a touch of salt. I chose to use one egg yolk (as opposed to more) to ensure the matcha flavor remained prominent, resulting in a robust flavor and smooth texture.
