Sweet Potato Cinnamon Toast Crunch Cereal

Why this recipe stays crunchy

Sweet potatoes naturally contain a lot of moisture, so the key to getting that classic cereal crunch is removing as much moisture as possible during baking and letting the cereal cool completely before storing. Don't rush the process—this is what makes all the difference.


Ingredients

Wet Ingredients

  • ½ cup mashed baked sweet potato (cooled)
  • 2 tbsp maple syrup
  • 1 tbsp melted butter
  • 1 tsp vanilla extract

Dry Ingredients

  • 1¾ cups oat flour
  • ½ cup almond flour
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt

Cinnamon Sugar Coating

  • Light spray of avocado oil or cooking spray
  • 2 tbsp coconut sugar
  • 1 tsp ground cinnamon


Instructions

Step 1: Prepare the Dough

Preheat your oven to 325°F (163°C).

In a large bowl, whisk together the mashed sweet potato, maple syrup, melted butter, and vanilla until smooth.

Add the oat flour, almond flour, cinnamon, baking powder, and salt. Mix until a soft dough forms. If the dough feels sticky, sprinkle in 1–2 tablespoons of oat flour until it's easy to handle.


Step 2: Roll It Thin

Place the dough between two sheets of parchment paper.

Using a rolling pin, roll the dough to about 1/16 inch thick. The thinner you roll it, the crispier your cereal will be.

Use a pizza cutter or knife to cut the dough into small squares, similar in size to Cinnamon Toast Crunch cereal.


Step 3: Bake

Transfer the parchment paper with the cereal squares onto a baking sheet.

Bake for 20 minutes.

Remove from the oven and carefully flip as many cereal squares as possible.

Return to the oven and bake for another 12–15 minutes, or until the pieces are dry and lightly golden.


Step 4: Dry the Cereal

Turn the oven off.

Leave the cereal inside the warm oven for 30 minutes with the oven door cracked slightly open.

This extra drying step removes excess moisture from the sweet potato and helps the cereal stay crunchy longer.


Step 5: Cinnamon Sugar Coating

Lightly spray the cereal with avocado oil spray or cooking spray.

In a small bowl, mix together the coconut sugar and cinnamon.

Toss the warm cereal in the cinnamon sugar mixture until evenly coated.


Step 6: Cool Completely

Spread the cereal onto a wire cooling rack.

Allow it to cool for at least one hour before storing.

The cereal will continue to crisp as it cools.


Storage Tips

Store the cereal in an airtight glass container only after it has cooled completely.

For the best crunch:

* Keep the lid tightly sealed.

* Store at room temperature in a cool, dry place.

* Add a food-safe silica packet (optional) to absorb extra moisture.

The cereal stays freshest for 3–5 days.
