Golden-edged vanilla coffee cupcakes topped with lightly sweetened cream and a dusting of cocoa. Warm, cozy, café-at-home energy — no alcohol required.

Ingredients

For the Coffee Cupcakes

  • 1 box white or chocolate cake mix (Duncan Hines works beautifully)
  • 3 eggs
  • ½ cup oil
  • 1 cup strongly brewed coffee (cooled)

That’s it. The coffee replaces the water on the box.


For the Whipped Vanilla Cream

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Optional: light dusting of cocoa powder


Step-by-Step (No Guessing)

  1. Preheat oven to 350°F. Line a cupcake pan with paper liners.
  2. Brew strong coffee and allow it to cool fully.
  3. In a mixing bowl, combine cake mix, eggs, oil, and cooled coffee.
  4. Beat for 2 minutes until smooth.
  5. Fill liners 2/3 full.
  6. Bake 18–21 minutes until the tops spring back lightly.
  7. Cool completely before topping.

For the cream:

  1. Beat heavy cream until soft peaks form.
  2. Add powdered sugar and vanilla.
  3. Beat until medium peaks — fluffy but not stiff.

Pipe or spoon onto cooled cupcakes.

Dust lightly with cocoa powder.

Done.
