Wine by the Glass Programme Cost & Spoilage Model: Cost per Glass, Pour Size, Spoilage and Preservation Payback Model for Bars and Restaurants
Full description
For beverage managers, sommeliers, bar managers and cost controllers who want to know what each glass of wine costs and where wine is lost after opening. The main workbook takes one row per wine and one row per wine and month. It works out glasses per bottle, cost per glass with expected waste, target price, pour cost, the glass-versus-bottle check, spoilage, yield, days to sell a bottle against opened-bottle life, and margin by wine. It compares pour sizes, shows what over-pouring costs, tests the payback of a vacuum pump, gas spray or inert-gas system, and shows price and margin against spoilage. The companion workbook is a bottle log with pour tests for use at the bar. The Word guide sets out the method, a worked example, the opened-bottle standards and the monthly review.

How it works
- Set the thresholds, scenario and opened-bottle life by method on Assumptions.
- List your wines with bottle size, cost, pour size and prices, and enter each month of bottles opened, glasses sold and glasses wasted.
- Read Glass Model for pricing issues and Spoilage Review for bottles that outlast their life, spoilage and missing glasses.
- Test pour sizes, preservation equipment and prices on their tabs, then run the monthly review.

FAQ
Does it use brand or grape names?
No. Wines are generic codes and styles, so you can enter your own list.
How does it treat waste in the price?
Cost per glass divides the bottle cost by the glasses you can sell after the expected waste for the preservation method. The scenario can raise or lower that waste.
Can I change opened-bottle life?
Yes. Life and expected waste for each method are inputs on Assumptions. The guide gives typical starting values.
How many wines can it hold?
The sample has 24 wines and 8 spare rows. Add rows by copying the last formula row down on Wine List, Glass Model and Spoilage Review.
Do I need macros?
No. Every result is a standard worksheet formula.
