Full description

For hotel food and beverage directors, restaurant managers, executive chefs and finance managers who need to know what breakfast costs per cover and whether the service style is right. The workbook prices three styles (buffet, a la carte and continental) from 24 menu items with quantity and waste, adds staffing from covers per server and per cook, and values the breakfast inside the rate as rate premium against take-up times cost. A 60-day log tracks covers against the forecast issued, food cost, labour hours, waste and complaints with flags. A 10-page Word guide sets the daily standard, ordering sequence, waste rules, menu worksheet and weekly review.

FAQ

What does cost per cover include?

Food cost, waste, labour (servers, cooks and supervisor hours) and consumables, divided by covers.

How does it value breakfast in the rate?

It compares the rate premium per guest with take-up times the all-in cost per cover and gives the net value per guest, per room and per month.

Can I compare my own service styles?

Yes. Rename the three styles, change the prices and staffing ratios, and replace the menu items and quantities.

Does the forecast round the covers?

Only at the end. Cost uses unrounded covers, orders use covers rounded up to the next 5 and staffing rounds up per service.

Do I need macros or add-ins?

No. Every result is a standard worksheet formula.
