Fryer Oil Management & Change-Out Tracker: Fryer oil quality log, change-out record and oil cost per portion
Full description
For kitchen managers, chefs and food and beverage controllers who want to control fryer oil. The workbook holds a register of fryers and a daily log of TPM, temperature, oil condition, skimming, filtering, top-up litres and portions. Each reading gets a flag, from OK and Watch to Discard now. A change-out record shows oil life and disposal receipts. For any period you choose, each fryer shows oil used, oil cost, cost per portion and litres per 100 portions against your usage target, with a status such as Usage over target, Filter gap or Temp drift. The Word pack adds a daily check form, quality limits, filtering and change-out procedures and a weekly review.

FAQ
How many fryers and readings are included?
5 sample fryers, 210 sample readings over 21 days and 15 sample change-outs, with spare rows for your own.
How is oil cost worked out?
Oil used is the new oil at change-outs plus top-up litres in the period. It is priced per litre from the oil types table on Settings. Cost per portion is oil cost divided by portions fried.
What does Discard now mean?
A reading with TPM at or above your limit, or an oil condition of Smoky, Off smell or Foaming. Each Discarded shift must match a change-out, and the Checks tab tests this.
What is TPM?
Total polar material, read with a handheld oil tester. You enter the percentage the tester shows and set your own watch level and limit.
Do I need macros?
No. Every result is a standard worksheet formula.
