Full description

For kitchen managers, stewarding managers and food and beverage controllers who want a clean record of dish machine checks. The workbook holds a register of machines with their limits and a check log of wash temperature, final rinse temperature, sanitiser concentration, racks and detergent used. Each reading gets a result, and each check is OK, Out with an action, or Out with no action. A corrective action log shows days open and flags overdue actions. For any period you choose, each machine shows checks logged and missed, in-range share, detergent per rack against target, cost per rack and a status. The Word pack adds a check form, a limits card, a response table, the daily procedure and a weekly review.

How it works

  1. Set the period, compliance target and tolerances on Settings.
  2. Replace the sample machines with yours and enter the limits from the data plate and your chemical supplier.
  3. Log every check on Check Log and every corrective action on Actions. Follow the procedure in the Word pack.
  4. Read the machine statuses weekly and hold the review.

FAQ

How many machines and checks are included?

5 sample machines, 227 sample checks over 21 days and 11 sample corrective actions, with spare rows for your own.

How is a check marked out of range?

A wash or rinse reading below the machine minimum, or a sanitiser reading outside the range or left blank on a chemical machine, counts as an item out. The detergent check is separate.

How are corrective actions linked to checks?

By machine and date. A check with an item out shows Out, actioned when an action is logged for that machine and date, and Out, no action when none is.

Does it cover hot rinse and chemical machines?

Yes. Each machine is set to Hot rinse or Chemical on the register. Hot rinse machines skip the sanitiser reading.

Do I need macros?

No. Every result is a standard worksheet formula.
