
Nutty Granola
Ingredients -makes 4 portions
- 80g oats
- 40g roughly chopped nuts
- 1 tbsp chia seeds
- 40ml maple syrup
- 30ml melted coconut oil
- 2tbsp of any dried fruit
Method
- Preheat oven 160 c/140 fan or gas mark 3
- Lightly grease a baking tray
- Melt the oil and maple syrup in microwave for approx 60 seconds
- Combine all dry ingredients apart from the dry fruit
- Combine the wet ingredients with the dry and mix until evenly coated
- Spread evenly onto baking tray and bake for 15 minutes, stir in dry fruit and bake for a further 10 minutes or until golden brown
- Don't allow to overcook, take out of oven and cool completely in the tray When cool crush and store in an airtight container for up to 2 weeks.
Serve 1 portion with 125g of full fat greek yoghurt and a small handful of fruit
